Healthy Oatmeal Raisin Cookies

If you are a fellow foodie like me, you are gonna love this recipe for easy and clean oatmeal raisin cookies. I found this recipe on my favorite pass time, Pinterest, and modified it a little to make my own and a little healthier. The ingredients you will need are:

  • 3/4 canola oil
  • 1 cup brown sugar
  • 1/2 baking splenda
  • 1 egg
  • 1/4 cup of water
  • 1 tsp vanilla

Mix everything together until smooth then add:

  • 1   1/4 whole wheat flour
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 3 cups dry oatmeal
  • At least 1 cup of raisins

Mix all the ingredients. Place on a baking sheet and bake at 350 for about 9-12 minutes.

*** Boil the raisins in the 1/4 cup of water used above for a few minutes until soft then drain and add the water to the first mix and set aside the raisins for later***

That’s it!! You can always replace raisins with dark chocolate chips and add unsweetened cocoa powder  to make chocolate oatmeal cookies or add some crushed pecans or almonds to the mix .
